Air Fryer Zucchini

Easy Air Fryer Zucchini Recipe
Zucchini doesn’t have to be boring and learning how to cook it in the air fryer will change your life. It’s way easier than roasting in the oven for so many reasons. First of all, if you’re cooking smaller portions the air fryer is perfect. Servings for 2-4 is easily attainable, depending on the size of your fryer. Second of all, it’s so much faster than roasting zucchini in the traditional oven because you don’t have to wait to pre-heat. And the zucchini cooks much faster in the air fryer.

How to Cook Zucchini in Air Fryer
- Cut zucchini into thick slices or thick coins. Spray with oil on both sides of the zucchini. Season with salt, pepper and garlic powder. Make sure all the cuts are the same thickness so they can cook evenly.
- Lay the zucchini slices or coins in a single layer. This ensures that the tops and bottoms cook evenly. If you stack the slices, you’ll have the top ones that will cook too fast or burn. And then the bottom ones will still be raw.
- If you have a favorite seasoning add that if you like. Some ideas are using Italian seasoning, lemon pepper or curry powder.
- Air Fry until crispy! Time will change depending on the size of your air fryer and how thick you cut your zucchini.

Can you air fry summer squash?
Yes, summer squash is great! Timing and recipe is the same if you’re using summer squash. Even yellow zucchini cooks exactly the same too. Make air fryer zucchini chips with the yellow squash and you won’t regret. These coins or chips are delicious.
Air Fryer Garlic Zucchini
Ingredients
- 2 zucchini (@ 1 lb. or 455g total)
- Olive oil or cooking spray
- 1/2 teaspoon garlic powder
- salt , to taste
- black pepper , to taste

Instructions
- Trim the ends of the zucchini, if desired. Cut the zucchini into 1/2” thick slices (either into lengthwise slices or into coins).
- If cutting into lengthwise slices, cut to length to fit the width of your air fryer basket if needed. Lightly oil or spray the zucchini slices on both sides and then season with garlic powder, salt and pepper.
- Air Fry at 400°F for 8-14 minutes or until browned and cooked through. Round or coin cuts will cook quicker.
- Zucchini strips will cook a little longer depoending on the thickness. Once you cook your first batch, you'll know the best timing for your prefereed donenss.

Do you preheat air fryer for this recipe?
Hi Sarah, you don’t have to. But if you do pre-heat, check the zucchini a little earlier as it might cook quicker.
Wanted to use my “just picked” zucchini and didn’t want to just sauté it again, so looked for air fryer recipes… and found yours. Made it for dinner, just made one zucchini and ate the entire thing! I cut mine into coins and had it with air fried chicken legs and air fried perogies and dinner was KILLER! This is my new zucchini favorite! Thanks SO MUCH for posting this one, I’ll be making this a few times a week! Oh, and I did add some parmesan cheese to the tops. Like I said… DELISH!

Cut zucchini length wise got 4 in my air fryer. Cooked it over 15 minutes but it never crisped, however, it didn’t need to be. I followed recipe and topped them off with Parmigiano Reggiano. Yummy ?
What would be a good dish to serve with this?
Hi Teresa, you can serve this with a meat dish for dinner. Or chop it up and add it to a salad. Another idea is to make a veggie sandwich with the zucchini! Enjoy!

Wow – I didn’t think such a simple recipe could be that good! I’ll be buying a lot more zucchini from now on to cook this way. I did the coins and used olive oil to coat the zucchini.

These are delicious. Can you cook ahead of time and keep them warm?
Hi Nancy! So glad you enjoyed the zucchini. If you cook it ahead of time, it might get mushy and more soft as it sits. But if you re-heat in the air fryer, it should get a little closer to it’s original texture when you cooked it the first time.
Had lots of garden zucchini and came across your recipe. I cut them into thick coins, cooked them a little longer cause i like them crispier. Added some bbq sauce on top and it was perfect. Thanks guys.
