ZUCCHINI NOODLES WITH GARLIC, BUTTER & PARMESAN

Using a simple zucchini spiralizer or a vegetable julienne peeler, this simple meal is just requires a few ingredients. This is just a base recipe and can be adapted to any way that you want. Add some sausage, tomatoes or more vegetables to make it perfect fit for your family and menu. What ever you do, don't skimp out on the garlic. The flavor is amazing!

Ingredients
  • 2 medium zucchini
  • 2 Tablespoons butter
  • 3 large cloves garlic , minced (or to taste)
  • 3/4 cup parmesan cheese (approximately)
  • kosher salt or sea salt, to taste
  • black pepper , to taste
  • 1/4 teaspoon red chili flakes
US Customary - Metric
Directions
  1. Cut zucchini into spirals or noodle strands using the vegetable spiralizer or julienne peeler. Set aside noodles.
  2. Heat large pan on medium-high heat. Melt butter, then add garlic. Cook garlic until fragrant and translucent. Don't let the garlic burn.
  3. Add zucchini noodles and cook until tender, about 3-5 minutes. Zucchini noodles cook really fast, so taste a strand as you cook and decide how firm or "al-dente" you want the zucchini. Don't overcook the zucchini noodles or else they'll become mush.
  4. Remove the pan from the heat, add parmesan cheese and season generously with salt and pepper to taste. Add chili flakes then serve warm.

    I prepare the zucchini with spiralizer a bit earlier and sprinkle with a little salt to draw out some water first, pat dry and cook from this point. I think it helps it to be a bit more firm and less watery or possibly mushy.

      Sheri, That is how I prepare my zoodles. After using the spiralizer I put them in a colander, salt them pretty good. Let them sit for about 30 mins. A lot of water comes out. I rinse them a little, then pat them dry. Getting them dry is the secret. Use a little olive oil in fry pan, salt & pepper & saute for 2 to 3 mins. I probably will never go back to using pasta again. These are good. Why eat the carbs…. I have been on a low carb diet. Since finding out about zoodles, it opened a whole new variety of things I can eat for dinner.. Made my diet so much easier. I have lost 40 lbs since last April. Yea!!!!!!

    I love doodles, this recipe is great, but I half a pint of either cherry or grape tomatoes and dice up a small red onion saute in butter. They both add nice flavor to an already fantastic dish.
