Ok, this viral tunacado sandwich caught our attention. We had to try it cause all the cool cooks were raving about it so that was enough for us to run to the kitchen. Besides, how can you screw up a tuna avocado sandwich?

What is a Tunacado?

A popular juice chain called Joe & the Juice started serving this sandwich and everyone went nuts. It’s bascially a smooth, whipped tuna salad with pesto, avocado served on toasted bread. But what makes it super different is that the bread is super thin and super crispy. The crunch of the thin bread is almost cracker-like, but with more chew. So you can all the flavors and layers living within fantastic grilled bread. Now that’s a great sandwich.

How is this Tunacado sandwich different from Joe & The Juice?

We don’t whip our tuna salad. Sure, it’s a creamy texture but we prefer our tuna salad a little more chunky. Besides, we love adding chunks of celery, onion and other herbs so it would suck if all that veggie goodness is pulverized. So we use our popular tuna salad recipe for this viral tunacado.

Tunacado Sandwich

The crispy bread is what makes this tuna salad, avocado and pesto sandwich unique. Use what ever bread you have in your pantry but toast it crispy! Crisp the toast on a pan, in a panini maker or even in the toaster: extra crispy.

Ingredients

For the Tuna Salad

  • 10 ounces (285 g) tuna drained (2 cans)
  • 1/4 cup (56 g) mayonnaise , or more depending on how creamy you want it to be
  • 1 stalk celery , diced or minced
  • 2 Tablespoons (30 ml) sweet relish or diced dill pickles
  • 2 Tablespoons (30 ml) minced red onion
  • 1 Tablespoon (15 ml) minced parsley
  • 2 teaspoons (10 ml) mustard
  • salt , to taste
  • fresh cracked black pepper , to taste
  • 1/2 teaspoon (2.5 ml) dried dill , or 1 teaspoon (5ml minced fresh dill) – (optional)
  • 1/2 teaspoon (2.5 ml) hot sauce or Sriracha sauce – optional
  • freshly squeezed lemon juice to taste – (optional)

For the Tunacado Sandwich

  • 8 slices sourdough bread or healthy bread
  • 4 Tablespoons (56 g) olive oil or butter
  • 1/2 cup (120 ml) pesto
  • 1 large avocado , sliced
  • 1 large tomato sliced
  • 4 slices cheddar cheese optional

Instructions 

For the Tuna Salad

  • Add drained tuna to bowl and gently break up large chunks if your tuna is nice and flakey.

  • Add 1/4 cup mayonnaise, diced celery, 2 Tablespoon relish or pickles, 2 Tablespoons red onion, 1 Tablespoon parsley, 2 teaspoons mustard, salt to taste, black pepper to taste, optional 1 teaspoon fresh dill or 1/2 teaspoon dried dill, optional 1/2 teaspoon hot sauce, and optional lemon juice to taste.

  • Gently stir everything together and set aside.

For the Tunacado Sandwich

  • Butter or brush olive oil on both sides of bread.

  • Toast or crisp the bread on a warm skillet or panini press. Make sure the bread is nice is crispy because that's what makes the sandwich so great.

  • Spread pesto over the crispy bread, top with tomato, tuna salad and avocado. If you want cheese, add it now.

  • Top with another slice of the crispy bread and enjoy.

The original version does not have cheese, other than the cheese that is existing in the pesto. BUT that doesn’t mean you can’t add cheese and make a tunacado melt or tunacado grilled cheese. Go for it and make it your own. It’ll be delicious and you won’t regret making this for lunch or dinner!
