This baked chicken breast recipe is made with boneless skinless chicken breast and baked in the oven with salt, pepper and apple juice. The apple juice gives an incredible fruity, naturally sweet and moist texture to the oven roasted chicken breast without having to use any olive oil or butter. Simply put, this is a wonderful recipe that is both easy and quick but at the same time, loaded with great flavor and moist texture.

By wrapping the chicken breasts in aluminum foil, the chicken breasts are poached in the oven with the help of the apple juice for moisture. The steam from within the foil pocket combined with the apple juice, salt and pepper cook the chicken breasts to a perfectly moist and tender texture. If you don’t want to use apple juice with the chicken breast, you can use some orange juice or what ever juice flavor you prefer. As long as it’s naturally sweet, you have a perfect balance with the salt and pepper. This technique is so simple and it can’t get any healthier than this chicken breast recipe.

Oven Roasted Chicken Breast Recipe

Ingredients

  • 4 boneless, skinless Chicken Breasts , patted dry
  • 1/2 cup Apple Juice (120ml)
  • Kosher Salt , to taste
  • fresh cracked Black Pepper , to taste

Instructions 

  • Preheat the oven to 400°F.
  • Place each breast on pieces of aluminum foil large enough to wrap each chicken breast individually. Pour 2 Tablespoons of apple juice over each breast. Season with salt and pepper.
  • Fold the foil around the breast to create a sealed "boat" which will trap in the juices and steam around the chicken. Tear another set of foil pieces and wrap each breast a second time for additional protection.
  • Place chicken on a sheet pan. Bake for 20-25 minutes, or until the chicken is fully cooked.
  • Allow to rest for 10 minutes after removing from the oven, then cut or shred the chicken as desired.
