Easy Baked Cod Recipe

Whether you want to cook cod with garlic butter or not, just the baked cod technique we show below has many possibilities. You can use what ever sauce you want over the perfectly oven baked fish. Add what ever vegetables you want to complete this healthy and GLP-1 friendly fish recipe. The fragrant garlic with butter and an extra squeeze of fresh lemon juice is better than what you can get in a restaurant.

What About Baking Frozen Cod Fillets?

Buying frozen cod fillets is smart and budget friendly. Best of all, it’s always ready in the freezer. We know it’s not easy to get fresh fillets of cod so frozen fillets are just as good. These are usually flash frozen as soon as they’ve been processed, so they’re still high quality fish. Just make sure the fish fillets are thawed completely and release all the moisture. Baked Cod with Garlic Butter

Baking with other types of white fish other than cod will have different baking times. Thinner fillets like tilapia or sole will cook quicker. Please keep checking the fish to ensure it's cooked enough or not too much.

Ingredients

  • 4 6 oz./170g cod filets , or other similar white fish fillets
  • 1/2 teaspoon (2.5 ml) salt
  • 1/4 teaspoon (1.25 ml) fresh cracked black pepper
  • 1/2 teaspoon (2.5 ml) smoked paprika , optional or to personal taste
  • 3 Tablespoons (42 g) salted butter , softened
  • 2-3 Tablespoons  (30-45 ml ) minced garlic , or more if you like
  • 1 Tablespoon (15 ml) fresh minced herbs , dill, parsley or basil

Instructions 

  • Pre-heat oven to 400°F/205°C. Lightly oil a baking dish and set aside.

  • Gently rinse cod fillets in cold water and pat dry. Season both sides of cod with salt, pepper, and paprika. Set aside.

  • Make the compound butter: in bowl stir together the softened butter, garlic and parsley.

  • Rub compound butter on both sides of the cod.

  • Bake at 400°F/205°C for about 15-20 minutes or until fish flakes easily with a fork. Internal temperature of the fish should be 145°F/63°C.

  • Reserve the melted butter sauce in the baking dish to pour over the fish before serving.

  • Serve with your favorite vegetables and lemon slices (optional).

Can You Freeze the Leftovers?

We don’t suggest freezing the fish. The flavors and textures just aren’t great. So just make enough for you to eat for the meal. It makes total sense to cook what you’re gonna eat because this baked cod recipe is so easy. There’s no reason to have to even make a bunch of it for meal prep. Just eat what you make. If you want to meal prep, just make the garlic butter ahead of time. Then when ready, coat the fish in the garlic butter and bake. Easy peasy.
