The flavors come from caramelizing the mushrooms, so make sure to cook these mushrooms on high heat. You can add additional garlic if you love garlic and more lemon for the bright citrus flavors. This awesome white wine mushroom recipe is the perfect vegetable side dish at your next gathering. If you don’t want to use white wine, you can use a little bit of balsamic vinegar in place of the wine.

Sautéed Button Mushrooms in White Wine Sauce

Yield: Serves 4

Total Time: 20 min

Ingredients:

  • 16 oz (455g or 1 pound) small button mushrooms
  • 1/4 cup (60ml) olive oil, divided
  • 4 cloves garlic, chopped or crushed
  • 1 medium onion, minced
  • 1/2 cup (120ml) white wine
  • 1 tablespoon (15ml) lemon juice
  • 1/2 teaspoon chili flakes
  • 2 tablespoons (30ml) butter
  • 2 tablespoons (30ml) chopped parsley
  • kosher or sea salt to taste
  • fresh cracked black pepper to taste

Directions:

  1. Brush the mushrooms clean. Keep the mushrooms whole, or if they are large, cut them in half.
  2. Heat large skillet over high heat. Add half of the olive oil (2 tablespoons), then mushrooms. Cook and stir mushrooms until they start to brown and caramelize, about 3-5 minutes.
  3. Add remaining olive oil and then add onions and garlic, cook until translucent.
  4. Add wine, lemon juice and chili flakes. Cook for about 2 minutes or until liquid reduces down a bit.
  5. Add butter and chopped parsley, cook for an additional 1 minute.
  6. Season with salt and pepper. Serve warm.

    I’m assuming the onion and garlic is minced ? 😉 and it looks like from the picture the mushrooms are kept whole?

      Correct. You can cut the mushroom if you prefer, especially if they are large.

      We like to use a dry white like a sauvignon blanc or similar, but it is really up to personal preference.
