Did you know you can freeze whole peaches? We’ve been doing this for a while and it’s a game changer for desserts. Once the peaches are completely frozen, we shave them with a fine grater over a yogurt and cream mixture. WOW, it’s the best shaved frozen peaches and cream dessert ever.

Freezing Fresh Peaches in the Freezer

Yup, it’s that simple. Just throw some whole fresh peaches in the freezer. Now it takes at least 24 hours to freeze the peaches completely through the center. So it does take a little planning. Even freezing the peaches for about 4 hours isn’t enough to get a icy grated texture when it’s grated.

What Do Shaved Frozen Peaches Taste Like?

It tastes like a peach icee. Yes, it’s that good but again, it only works if you use the right tool. But when shaved correctly, the flaky icy flecks of shaved frozen peaches just melt in your mouth. It truly is like a shaved peach icee with with 100% peach! There’s so many different varieties of peaches to choose from!

Best Grater for Shaving Peaches

You can’t use a regular cheese grater. Why? because it’s not sharp or fine enough to create a shaved “ice” texture. If you use a plain cheese grater, you’re going to get thick pieces of peaches that resembles grated cheese. The best tools are sharp microplane or large zester/ribbon grater. If you don’t have one of these microplane style tools, it’s time to invest in one. They’re totally worth it.

What is the Creamy Base?

You can do a mix of different things. Play around with the different combinations and it also depends on the time of day that you eat it. The shaved peaches can be for breakfast or as a dessert.

  • All Yogurt for breakfast or parfait: The shaved peaches are great over yogurt or parfait for breakfast.
  • Combination of Yogurt & Cream: This is what we did so it’s not so sweet. For the yogurt any kind will work, but we prefer a plain yogurt. Especially a nice, creamy Greek yogurt that isn’t overly tangy. But make it to your liking. You can even play with different flavored yogurts.
  • All whipped cream: this is the most decadent if you top it on whipped cream. But if it’s whipped cream over ice cream, then it’s the perfect ice cream sundae with shaved peaches. Here’s our recipe for how to make homemade whipped cream. Learn all the different stages of making this properly.
  • Cool Whip: is a quick and easy way to have as the base.

Shaved Frozen Peaches & Cream

This is a brilliant way to save and use the abundance of fresh summer peaches. Freeze the peaches (they last for a long time in the freezer), then when frozen and shaved, the peaches create a shaved ice like texture with all the delicious sweetness and flavor of the ripe peach.
For the cream part it can be whipped cream or yogurt or a combo of both. You can make your own whipped cream or use whipped topping, and then personally we like to thicken the texture and make the flavors a little less sweet by mixing in plain yogurt. Mix in whatever ratio you like, from all whipped cream to all yogurt, or any combo of them that is to your liking.
The freezing might not take a full 24 hours, but you do want to make sure they are frozen rock solid. 24 hours is always a good safe timing. If you don't use all the peach when shaving, place the remaining peach back in the freezer to keep for the next time.

Ingredients

  • 1 fresh whole peach , fully frozen
  • 1/2 cup (120 ml) whipped cream , or whipped topping (Cool Whip etc.)
  • 1/2 cup (120 ml) plain yogurt , or flavor of choice
  • 2 Tablespoons (30 ml) chopped roasted nuts , optional
  • 1 Tablespoon (15 ml) honey , maple syrup, caramel sauce, or other preferred drizzle

Instructions 

  • If needed, wash and then pat dry the peach. Place in the freezer for at least 24 hours or until fully frozen and hard.

  • Stir together the 1/2 cup of whipped cream and 1/2 cup of plain yogurt, or whatever ratio of the two you like. Mix until evenly combined. Divide between 2 bowls.

  • Shave the frozen peach on top of the cream mix with a very fine grater or microplane. Shave as much as you like. Just a note about the shaver/grater: if you're using a regular cheese grater, the peach texture won't be as fine and fluffy. The peach texture and flavor will still be tasty, but it won’t be the fluffy, melt in your mouth texture that a microplane or ribbon grater will give you.

  • Finish off the shaved peaches and cream with chopped roasted nuts, honey or whatever you like. Eat immediately.
