Roasted Cauliflower “Hummus” – Low Carb!
You really have to try out this wonderful dip that’s truly healthy and low carb. If you’re looking for a low carb dip or appetizer, our roasted cauliflower hummus is perfect! It’s all vegetable and tasty.

Roasted Cauliflower Hummus
We’ve always been addicted to fresh homemade hummus and after different versions we were wanting to experiment with something new. Thinking about a low carb version that can still be vegan and plant based, we thought about all the possibilities of cauliflower. So voila, the experiment to make a really good cauliflower hummus recipe was in pursuit.
- After a few experiments, we realized that roasting the cauliflower brought the best concentrated flavor and texture to this awesome healthy “hummus”.
- Then doing another trial, we kept blending it or pureeing it more to get a better smooth texture. So that our roasted cauliflower hummus recipe can be truly amazing and delicious! Everyone we shared it with was blown away at how delicious and easy it was to make.

Easy Keto Hummus Recipe
It was especially exciting to know how low carb this cauliflower “humus” is and there is no loss of flavor nor texture. Best of all, it’s keto friendly. We roasted the cauliflower to a nice crisp and color. All the excess moisture is cooked out and what’s left is a purely delicious roasted cauliflower flavor. With the addition of fresh garlic, tahini and other spices this fantastic low carb “hummus” was a true hit. It’s great for everyone who needs a paleo hummus or are on the keto or ketosis diet.

Roasted Cauliflower Hummus
Ingredients
For Roasting Cauliflower
- 1 medium Cauliflower , (about 2 lbs./910g) cut into small pieces
- 1/2 teaspoon Garlic Powder
- Kosher Salt , for roasting cauliflower
- Black Pepper , fresh cracked if possible for roasting cauliflower
Additional Ingredients for Hummus
- 1/2 cup (120 ml) Olive Oil , plus additional for roasting cauliflower
- Zest of 1 Lemon
- 2-3 Tablespoons (30-45 ml) fresh Lemon Juice , to taste
- 2 Tablespoons (30 ml) Tahini Paste
- 2 cloves Garlic , chopped
- 1 1/2 teaspoons (7.5 ml) Kosher Salt , or more to taste
- Optional , Black Pepper for garnish
- Optional , Paprika for garnish
Instructions
- Preheat oven to 450°F (232°C). Line a baking sheet pan with parchment paper.
- Place cauliflower on lined baking sheet pan and toss cauliflower with a light coat of olive oil. Spread cauliflower in single layer and season cauliflower with 1/2 teaspoon garlic powder, plus salt and pepper to preference.
- Bake at 450°F (232°C) for about 30 minutes or until tender. Allow to cool until comfortable to touch
- In blender (or food processor) combine all ingredients (roasted cauliflower, 1/2 cup olive oil, lemon zest, 2-3 Tablespoons lemon juice, 2 Tablespoons tahini paste, chopped garlic, and 1 1/2 teaspoons salt). Blend until smooth, if necessary stopping blender a few times and stirring mixture to help it blend smooth. Blend in one tablespoon additional olive oil at a time to make the hummus creamy and smooth.
- Taste the dip and add more salt and pepper, to personal taste. Blend again if adding more seasoning. For a smoother consistency, add some water and blend more to achieve your preferred texture.
- Refrigerate for 30 minutes or up to overnight, allowing the flavors to marry. Hummus will keep for several days stored airtight in the refrigerator.
- Serve dusted with optional black pepper and/or paprika and with your favorite pita bread, vegetable crudités, crackers, chips, toast, or crispy bread.

Ideas for serving
Whether you’re serving it as an appetizer or side dish, there’s lots of yummy ways to enjoy our roasted cauliflower hummus. Here’s some delish ideas:
- Appetizer: as with any hummus or dip, serve it with some raw vegetables, crackers or bread. Add it to your cheese boards and everyone will be blown away that this “hummus” is actually all cauliflower.
- Spread it on a sandwich for another awesome flavor.
- Vegan option: replace cheese or cheese or dairy spreads with this hummus. It’s a great vegan and plant friendly alternative to wraps and sandwiches. It definitely replaces all the usual dairy spreads like mayo or cheese.
- If it’s slightly chunky, you can easily serve it as a side dish to grilled meats or pasta dishes. It’s like a chunky version of mashed potato but without all the carbs.

Low carb hummus dip sounds so awesome ! I’m new to the “bestrecipebox.com” and enjoying what I see so far.
I do need to ask is there somewhere I can see the amount of carbs in the recipes ? The LOW carb description is
what really caught my eye as I am a diabetic.
