All the flavors and textures in our garlic shrimp zucchini noodles are fantastic and everyone in the test kitchen devoured this with delicious pleasure. It truly is shrimp scampi without all the extra carbs. Overall, here’s no sacrifice for flavor because the zucchini noodles absorb the flavors wonderfully and every bite is wonderful.

Garlic Shrimp Zucchini Noodles
Ingredients
- 2 medium zucchini
- 1/2 pound (454 g) medium raw shrimp , shelled and de-veined
- 2 Tablespoons (30 ml) butter (or olive oil)
- 3 cloves garlic , minced (or to taste)
- 3/4 cup (75 g) parmesan cheese (approximately)
- kosher salt or sea salt , to taste
- black pepper , to taste
- 1/4 teaspoon (1.25 ml) red chili flakes
- Lemon wedges , optional

Instructions
- Cut zucchini into spirals or noodle strands using the vegetable spiralizer or julienne peeler. Set aside noodles.

- Heat large pan on medium-high heat. Melt 2 Tablespoons butter/olive oil, then add minced garlic and shrimp. Cook shrimp until pink and cooked through. Don't let the garlic burn.

- Add zucchini noodles and cook until tender, about 3-5 minutes. Zucchini noodles cook really fast, so taste a strand as you cook and decide how firm or “al-dente” you want the zucchini. Don’t overcook the zucchini noodles or else they’ll become mush.

- Remove the pan from the heat, add 3/4 cup parmesan cheese, squeeze some lemon juice and season generously with salt and pepper to taste. Add chili flakes then serve warm with optional lemon wedges.

Cooking with cooked frozen shrimp vs raw shrimp
You can use pre-cooked frozen shrimp for this recipe. Just let the shrimp thaw and pat it dry with paper towels to remove all the water from the shrimp. Then continue to the recipe but the cooking time will be quicker because the shrimp is already cooked.
