  • You can just let the cheese melt and crisp to make a round shell. This is just the cheese that’s toasted and shaped then folded like a taco shell. It’s all cheese, no tortilla and totally keto friendly.

Best cheese for these crispy burnt cheese taco shells?

There’s so many different types of cheese but you want cheese that has flavor when it’s crispy and melted.

  • We like using mild or sharp cheddar cheese. You can also use pepper jack, colby, or shredded parmesan.
  • you can use mozzarella but it won’t get too crispy. It’ll be melted and gooey but not crispy and burnt.
  • pre-sliced American cheese is ok. It melts but doesn’t have that crispy cheese factor.

Crispy Cheese Tacos (burnt cheese tacos)

We like using the small street taco size tortillas, which are about 4-inches wide. You can use larger tortillas. Just know that you’ll have to use more cheese and a bigger pan. Sharp cheddar cheese gives a great flavor and crispy texture. Cheddar cheese is our favorite cheese to use. You can also use sliced cheddar cheese.

Ingredients

  • 6 tortillas (flour or corn)
  • 1 cup shredded cheddar cheese or 6 slices
  • 1 cup Cooked taco meat filling of choice or vegetable filling of choice (cooked squash, mushrooms, etc).

Topping Ideas

  • Salsas, guacamole, hot sauce, sour cream
  • Lettuce, pico de gallo, chopped cilantro, onion, diced radish, etc

Instructions 

  • Heat pan over medium-high heat and toast both sides of the tortilla. Set aside.

  • Keep pan on medium-high heat. Lay enough shredded cheese to fit your tortilla. Or lay one slice of cheese on hot pan.

  • Lay tortilla on top of the cheese and gently press tortilla down onto cheese.

  • Cook the cheese until it starts to get golden and crispy, about 30 seconds. Gently flip the tortilla and cook the other side of the tortilla for about 30 seconds.

  • Fold the tortilla to create a taco shell and remove from heat. Allow the crispy cheese tortilla to cool a bit before handling. But don’t wait too long because the cheese can start to get soggy.
