The explanation is simple and the crunch factor is sky high. These are basically melted cheese on the outside of a tortilla. But it’s not just soft melted cheese. It’s crispy, crunchy, flavorful from being almost-burnt cheese. The texture and savory factor takes these taco shells over the top. The charred almost-burnt cheese taco shells are all the rage now and rightfully so. They are so good! There’s even a burnt cheese taco capitol.

Make it Keto Crispy Cheese Taco Shells

If you want to make a keto friendly or low carb version of these crispy burnt cheese shells, here’s 2 ways:

  • Use keto friendly street taco shells. We love using the small street flour tortilla shells that are keto friendly.
  • You can just let the cheese melt and crisp to make a round shell. This is just the cheese that’s toasted and shaped then folded like a taco shell. It’s all cheese, no tortilla and totally keto friendly.

Best cheese for these crispy burnt cheese taco shells?

There’s so many different types of cheese but you want cheese that has flavor when it’s crispy and melted.

  • We like using mild or sharp cheddar cheese. You can also use pepper jack, colby, or shredded parmesan.
  • you can use mozzarella but it won’t get too crispy. It’ll be melted and gooey but not crispy and burnt.
  • pre-sliced American cheese is ok. It melts but doesn’t have that crispy cheese factor.

Crispy Cheese Tacos (burnt cheese tacos)

We like using the small street taco size tortillas, which are about 4-inches wide. You can use larger tortillas. Just know that you’ll have to use more cheese and a bigger pan. Sharp cheddar cheese gives a great flavor and crispy texture. Cheddar cheese is our favorite cheese to use. You can also use sliced cheddar cheese.
