Low-Carb Air Fryer Scotch Eggs

We’re obsessed with these! Scotch eggs are the perfect breakfast and brunch dish. It’s always a great conversation piece when everyone sees the boiled egg stuffed in sausage. Use whatever your favorite sausage might be: Sweet Italian, Breakfast Sausage, Chicken Apple, etc. Don’t forget the swipe of mustard and hot sauce. Yum!
You can also cook your "hard boiled eggs" in the air fryer too.

Notes

You can add additional flavor to your sausage by mixing it with some Worcestershire, fresh parsley and other spices. If not, simple bulk sausage still tastes great!
Coating Choice: If you don’t mind a few more carbs, bread crumbs, panko flakes, or crushed crackers work great as breading choices too. For fewer calories or simpler preparation, you can omit the coatings (beaten egg & breading). The sausage-only outside is great, too, but make sure to spray outside of sausage with oil.
