The softer & riper the pears, the better the flavor. Same for the apples. Even if the apples are on the mealy side, as long as they still have a good taste, they'll be perfect for this Pear-Apple sauce.You can use any combination of pears and/or apples. We based this recipe on 3 pounds of fruit and like the 2 pounds of pear-1 pound apple ratio, but you can use whatever you like. It can be all pear, all apple, or any combination of. Makes about 1 qt.

Ingredients
2pounds(910g)pears, peeled cored and cut into 1" chunks
1pound(455g)apples, peeled cored and cut into 1" chunks
2Tablespoons(30ml)packed brown sugar, or to taste
1teaspoon(5ml)ground cinnamon
1/4teaspoon(1.25ml)ground clove or nutmeg
1/4teaspoon(1.25ml)ground ginger
1teaspoon(5ml)vanilla extract
1/2cup(120ml)water
lemon zest, from 1 medium lemon
Instructions
Peel and cut pears and/or apples into 1" cubes. Set aside.
Combine all ingredients (chopped pears & apples, 2 Tablespoons (30ml) brown sugar, 1 teaspoon (5ml) cinnamon, 1/4 teaspoon (1.25ml) clove or nutmeg, 1/4 teaspoon (1.25ml) ground ginger, 1 teaspoon (5ml) vanilla extract, 1/2 cup (120ml) water, and lemon zest) in a saucepan. Heat over medium-high heat until the mixture reaches a simmer. Reduce heat to low and simmer on low heat for about 20-30 minutes, or until the pear and apple chunks becomes soft and tender. Cooking time will vary depending on the ripeness of the pears and apples.
Allow sauce to cool, then mash or blend in a blender/food processor to your preferred texture and consistency.
Taste for seasonings. You can always add a little more brown sugar, cinnamon or your favorite spices.
