Use a blocks of cheese then grate it because this ensures that the cheese sauce will be smooth and not gummy. Pre-shredded cheese is often coated with a powder that will cause the sauce to be gummy and waxy. For the perfect juicy beef patties, we prefer a slightly fattier ground beef (an 80/20 or 85/15). Recipe makes about 10 sliders and 8 quarter-pound burgers
Heat pot to medium/high heat. Melt the 1/4 cup of butter then add 1/4 cup of flour. Whisk until no flour clumps remain.
Add 2 cups milk and continue whisking then add the 1 teaspoon garlic powder.
Add all the 3 cheeses (2 cups total) and continue to whisk until cheese sauce is smooth. Taste it and add salt if needed.
If the cheese sauce is too thin, you can always add more cheese later or wait until you’re ready to serve it. The cheese sauce should be on the thinner side. As you’re making the burgers, the cheese sauce will cool and will become more thick. When you’re ready to serve the cheese sauce that’s when you can decide if you need to add more cheese to thicken it or more milk to thin it out.
Sliders or Burgers Instructions
In a bowl, combine 2 lbs. ground beef, 1 teaspoon garlic powder and black pepper to taste. Mix together well. Form the meat into 10 slider balls or 8 (quarter pound) balls for burgers.
Heat large skillet or flattop to high heat. Place balls of meat on skillet.
Using an offset spatula, smash down on the beef patties. If you like your sliders super-seasoned, sprinkle a bit of flaky salt and additional black pepper on the smashed patties.
Cook the patties for about 1-2 minutes and flip.
While patties are cooking, you can cook the onions at the same time if you want grilled onions.
Assemble the burgers: For best bun texture (can be skipped if you need to), place buns cut side down to toast them while or just after the burger patties cook. Place pickles on the slider buns.
Add the cooked beef patty, then top with grilled onions.
Add a slice of cheese on top of each patty.
Top with your choice of condiments like the onions, sauces, mayo, etc. Add bun tops.
Heat the sizzle pan (or whatever pan you are going to serve the sliders in) over medium-high heat until it starts to smoke. For the sizzling, it needs to be nice and hot.
Place the sliders or burgers on the hot sizzle pan. Leave a space where you can pour the cheese sauce. Careful of the hot pan!
Pour some cheese on the hot sizzle pan and let it sizzle.
Allow slider to cool just a little bit and enjoy!
