Don’t let the extra excess pieces of watermelon go to waste. Make watermelon aqua frescos, mojitos or margaritas out of them!
1medium(1medium)watermelonabout 8-10 pounds (3.5-4.5 kg)
6ounces(170g)fresh blueberries, about 1 cup
2ounces(57g)feta cheese, crumbled
zest of 1 medium lemon or lime
1/2cup(120ml)chopped mint leaves (optional)
Cut the watermelon into 1/2-inch thick slices. Using a star cookie cutter, cut out watermelon star shapes. Gently transfer the watermelon stars to a large bowl or platter.
Add fresh blueberries and feta cheese. Zest lemon over the fruit, then drizzle the lemon juice over the salad. Gently toss the fruit, trying not to break the star shapes. Add mint leaves and chill salad for about an hour before serving.
