Place each breast on pieces of aluminum foil large enough to wrap each chicken breast individually. Pour 2 Tablespoons of apple juice over each breast. Season with salt and pepper.
Fold the foil around the breast to create a sealed "boat" which will trap in the juices and steam around the chicken. Tear another set of foil pieces and wrap each breast a second time for additional protection.
Place chicken on a sheet pan. Bake for 20-25 minutes, or until the chicken is fully cooked.
Allow to rest for 10 minutes after removing from the oven, then cut or shred the chicken as desired.
