Ingredients
1cup(140g)cooked chicken, chopped (use chicken breast or chicken thighs)
2 Tablespoons(30ml)chopped dried fruit, such as apricots or raisins
1/4cup(25g)celery, chopped
2green onions, chopped
2Tablespoons(30ml)fresh cilantro, minced
1/4teaspoon(1.25ml)salt, or to taste
fresh ground black pepper, to taste
Instructions
Chop or tear leftover cooked chicken to bite sized pieces. Set aside
In large bowl, add chicken, mayo, lime juice, curry powder, ground cumin, soy sauce, dried fruit, celery, green onion, cilantro, salt and pepper.
Stir to combine all the ingredients together until chicken is coated with all the spices and other ingredients.
You can eat it right away or if you prefer it cold, chill for about 30 minutes before serving. Serve in a sandwich, with crackers or with tortilla chips.
