Radish Avocado Salad Recipe

Ingredients

For the salad:

  • 2 bunches of radishes (about 1/2 pound), washed and cut into quarters
  • 1 large avocado , seeded and diced
  • 2 Tablespoons minced cilantro
  • 2 green onions , sliced thin

For the vinaigrette:

  • 1 Tablespoon olive oil
  • 1 Tablespoon lime juice
  • 1 large clove garlic , minced
  • 1/4 teaspoon sugar
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt , or to taste
  • fresh cracked black pepper to taste
  • 1/4 teaspoon soy sauce (optional or use Tamari for gluten free)

Directions

  1. Make the vinaigrette: in medium bowl, combine olive oil, lime juice, garlic, sugar, ground cumin, salt and black pepper. Add optional soy sauce if desired. Whisk ingredients together.
  2. Add radishes, cilantro and sliced onion. Stir salad to coat the radishes with the dressing.
  3. Add avocado, gently toss to combine evenly with radishes.
  4. Chill for about 15 minutes. Serve chilled.
