There’s many possibilities to this recipe.  Spinach, crumbled bacon bits, tomato, chopped bell peppers, minced broccoli and kale are just a few examples of the different ways you can make this recipe delicious and fun!


  • 12 large eggs
  • 1/3 cup milk
  • 1 cup diced ham
  • 5 stalks green onion , diced
  • 1/2 cup cheddar cheese plus extra if you want for topping
  • kosher salt , to taste
  • Black pepper , to taste


  • Avocado
  • Salsa
  • Fresh chopped tomatoes
  • Fresh Basil


  1. Preheat the oven to 350°F. Grease a 12- muffin cup pan with cooking spray.

  2. Whisk together the eggs. Add milk, ham, green onions and cheese. Season with salt and pepper.  Stir mixture until combined.
  3. Using a large spoon or small ladle, divide the mixture evenly between the the muffin pan. If you want extra cheese, you can sprinkle some on top of each muffin cup.
  4. Bake the egg muffins for 20 to 25 minutes, or until the egg is fully cooked. Allow egg muffins to cool for 3-5 minutes in the pan then use a knife to loosen the muffins and onto serving plates.
  5. Serve warm with additional favorite toppings!
