watermelon
chunks (cut into 1 inch cubes-about 8 cups)

olive oil
zest 1 medium lemon

lemon juice

fresh mint leaves
, chopped (reserve a few whole mint leaves for garnish)

feta cheese
kosher salt
to taste, optional

Directions
In large bowl combine olive oil, lemon zest, lemon juice and mint. Stir to combine.
Add watermelon chunks and gently stir to coat the dressing in the watermelon.
Add feta cheese, black pepper. Gently toss to combine all ingredients. Taste for seasoning and add more salt if needed. Serve chilled.
