  • 4 lbs. watermelon chunks (cut into 1 inch cubes-about 8 cups)
  • 3 Tablespoons olive oil
  • zest 1 medium lemon
  • 1 Tablespoon lemon juice
  • 3 Tablespoons fresh mint leaves , chopped (reserve a few whole mint leaves for garnish)
  • 4 oz. feta cheese
  • kosher salt to taste, optional
  • black pepper , freshly ground if possible


  1. In large bowl combine olive oil, lemon zest, lemon juice and mint. Stir to combine.
  2. Add watermelon chunks and gently stir to coat the dressing in the watermelon.
  3. Add feta cheese, black pepper. Gently toss to combine all ingredients. Taste for seasoning and add more salt if needed. Serve chilled.
