Tips for How to Make Chicken Vegetable Soup in Crock Pot (Slow Cooker)
This slow cooker chicken vegetable soup recipe is the perfect balance of healthy chicken breast and loaded with veggies.
- If you want more vegetables, then just add more to your hearts content. Add potatoes for a more hearty soup. If you want to add kale or spinach, chop them up and add them to the soup about 15 minutes before serving. These leafy greens break down quick and you don’t want to have mushy greens.
- Make sure to season the soup enough because that’s what brings out the flavor too. Add a splash of soy sauce or fish sauce for extra umami flavor!
- For a spicy version, add some hot sauce or chili garlic sauce on the side. Or you can add about 1/2 teaspoon of red chili flakes for extra heat.
- Not only is this a great recipe that you can come back to in a few hours to a beautiful soup aroma, but it’s a smaller batch. It’s perfect to feed about 4-5 for a side dish, or for 3-4 hearty entree sizes. And best of all, you can have some left over for lunch the next day.
For more flavor use boneless skinless thighs for chicken soup
If you’re a fan of using chicken thighs, then go for it! Dark meat like chicken thighs add so much more flavor. And best of all, boneless skinless chicken thighs cook quicker too. So if you’re in a hurry and want a quicker cooking soup in the crock pot, use thighs instead of chicken breasts. But make sure the thighs are skinless because you don’t want all the excess fat floating to the top of the soup. The skin on chicken thighs are too fatty.
Low carb and keto version chicken soup
If you’re wanting to count calories and make this soup low carb or keto friendly, don’t use the carrots. Instead, you can add more low carb veggies like more zucchini, celery, kale, broccoli or cauliflower.

Nutrition Information per Serving
Can you add noodles or pasta to the crock pot or slow cooker soup?
Sure! Add about 1/2 cup of small pasta like macaroni, small penne or egg noodles. Don’t add too much pasta or else it will soak up all the broth leaving you with just cooked pasta and veggies. But if you want less broth, then it’s cool to add a little more pasta.
Tips on Freezing Leftover Soup
Use air tight containers to freeze the soup for up to 3 months. We don’t like freezing soup for too long because it can easily get freezer burn which changes the texture and flavor. So try to eat it sooner tha later. Also, another tip is to freeze them in serving size microwave safe containers. That way, you just need to thaw it in the container then pop it in the microwave for a quick meal.

Can leftover soup be put in single serve containers and frozen?
Hi Marsha, yes you can freeze the leftover soup.
I’ve been addicted to using my slow cooker lately and this soup is probably one of my favorite recipes I’ve tried. Really healthy and tasty. Love how comforting this soup is.
Hello soup was excellent I did add a little bit of spaghetti squash so it’s almost like a noodle soup but just a tiny bit question you say 184 cal per serving is a serving one cup or two?
Love the addition of spaghetti squash! That’s a great idea. The serving is one cup.
Highly recommend adding parsnip & kimchi. So much flavour
Kimchi sounds amazing for extra flavor. Love the parsnip too. Thanks so much Rachel!
Hello 🙂 I was wondering if you knew the calories per serve for this? So yummy! Thank you ?
Hello Rachel! All the nutritional info is at the bottom of the recipe box. Thank you!
How would this be cooked on the stove?
Hi Moni, we would add all the ingredients except for the broccoli in a pot. Cook it for about 30-45 minutes on low simmer, then add the broccoli for the last 5 minutes.
This was so good! My 3 year old daughter was sick, so of course I turned to you for chicken noodle soup recipe. She hasn’t been eating well last couple days, but she ate this soup! I used a whole young chicken and regular wide egg noodles, but would like to try to find noodles you used for this recipe next time.
Hugs to your little girl and so glad our chicken soup recipe made her feel better. xoxo
Oh my goodness I just made this and it’s delicious!
SOOOOO YUMMY!!!
So glad you liked it!
I changed this up some based on the contents of my refrigerator. My chicken tenders were slightly frozen when I started, so I started on high (4 hr setting) for about an hour and half with the celery, carrots and onions. I used 8 cups of chicken stock and increased the spices accordingly. Then I added in a mixture of frozen peas and green beans (what I had) along with a drained and rinsed can of small white beans. Cooked on the 6 hr setting for about 3.5 hrs and found my chicken was very done (my fault, using thinner chicken tenders). At this point I added the zucchini as noodles (used my mandolin to slice) and set to warm. The spice mixture is very tasty and a nice change from our normal chicken soup! I served with a crusty Italian bread and everyone was happy.
can i use a chicken breast with bone in instead?
Yes, you can definitely use bone-in and will probably get much more flavor. Just make sure to shred the cooked chicken in a separate bowl to make sure no small piece of bone end up in the soup.
Cannot wait to amalgamate all of these wonderful ingredients. Sounds divine.
It really is divine. 🙂 Thanks for visiting!
If you double the recipe, can it still fit in the crock pot?
Cooking it right now. We all have a cold including our 10 month old so were looking forward to this tasty looking soup. We used bone broth and added potatoes, some of our personal favorites.
You should remind people to remove bay leaf when soup is done. To find the bay leaf easier I run a toothpick through it , like taking a stitch in cloth, and toss it in the pot.
I buy dried bay leaves and mill them to powder in my coffee mill. They make a lovely green aromatic powder, not a huge volume, but a tad gives all the essence of the leaf without the fishing it out. I add them with the mixed herbs in soups and stews. BTW, a slug of sriracha or a touch of curry powder livens up this soup.
Beautiful! And I forgot the broccoli! I made a stock the night before then made this the next day. Did not disappoint, and my 5yr old had 3 bowls and declared soup is his favourite! Thank you.
Can chicken go in raw or does it need to be cooked first?
When you cook in the slow cooker for a minimum of 4 hours, it can go in raw. And during that time, the chicken will be cooked. If you want it to cook faster you can cut the chicken breast into smaller pieces.
Should chicken be cooked before going in crock pot or can it be raw?
When making anything in the crockpot you combine all ingredients. Except for foods that cooks to fast such as broccoli, noodles, and etc. You put foods like that in about an hour before your pot is done
Eating it now and it’s yummy!! I used thighs though bc that’s what I prefer, and I also added summer squash bc hubby n I love it. I’ll definitely make this again! Thanks for the recipe!!
Anna- Yay! Glad you enjoyed the soup and we love the addition of summer squash too.
I loved this soup! I would recommend using chicken thighs instead of breasts though because my chicken got a little stringy.
That soup looks so good, pinned! And thanks for the shout-out!
