Everyday Egg Salad Recipe

Make this egg salad recipe unique to you. Be flexible and add more of what you like. You can make it less or more creamy by addition of mayo. Have fun!

Ingredients

  • 6 (6) boiled eggs , chopped
  • 1/2 cup (112 g) mayo , or more for extra creamy texture
  • 1 (1) shallot , minced
  • 1/4 cup (40 g) sweet pickles , minced
  • 1/2 cup (50 g) celery , minced
  • 1 Tablespoon (15 ml) fresh parsley , minced
  • 2 teaspoons (10 ml) dijon mustard
  • 1/2 teaspoon (2.5 ml) paprika
  • 1/4 teaspoon (1.25 ml) kosher salt , or to taste
  • fresh cracked ground black pepper , to taste

Instructions 

  • In large bowl, combine mayo, mustard, paprika, salt and pepper. Mix well.
  • Add eggs, shallots, celery, sweet pickles and fresh parsley. Gently stir together well. Chill for about 20 minutes.
  • Serve with crackers, with lettuce for a salad, or add to a sandwich.
