Salmon and Corn Chowder Recipe

Yield: Serves 4

Total Time: 30 minutes

For a richer soup, substitute cream for the milk in the recipe. See post above for additional recipe details.

Ingredients:

  • 1 pound (455g) skinless salmon
  • 2 slices bacon, cut into small pieces
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup (240ml) chicken stock
  • 1/2 teaspoon dried dill weed
  • 14 teaspoon dried thyme
  • 1 teaspoon (5ml) Worcestershire sauce
  • 14.75 ounce can (420g) creamed corn
  • 3/4 cup (120ml) milk (or heavy cream for a richer soup)
  • 2 medium green onions, chopped
  • Add salt and pepper to taste
  • (optional) crumbled bacon and cheddar cheese for topping

Directions:

  1. Rinse and pat dry the salmon. Cut into bite sized pieces and set aside.
  2. Heat pot on medium-high heat. Add bacon and cook until golden brown, stirring occasionally. Add onion and garlic. Cook until soft and translucent, about 2 minutes.
  3. Add chicken stock, dill, thyme, Worcestershire sauce, creamed corn, and milk. Bring to a gentle simmer and then cook on low heat for about 10 minutes.
  4. Add salmon and cook on low-medium heat for 10-15 minutes, or until salmon is cooked through and chowder begins to thicken.
  5. Add the green onions and if needed, season with salt and pepper to taste.
  6. Add your toppings. Serve warm.
