Baked Fried Chicken Recipe is delicious, healthy and crispy ! @bestrecipebox

It’s hard to pass up a great batch of fried chicken. But when you’re wanting something a little healthier without all the deep frying oil, then try this easy oven baked chicken recipe that results in a crust that is crispy and almost “fried”. Sometimes we can by-pass all the oil and making this oven baked fried chicken is much healthier and still have a nice crunch. The seasoned bread crumbs on the outside of the baked chicken provides plenty of flavor and texture, similar to fried chicken, but it’s baked in the oven for about 45 minutes.

When making this baked “fried” chicken, try to keep the sizes of the chicken pieces the same size, so that they will cook evenly. Baking times will vary depending on the size of the chicken drumsticks and thighs. To make sure the chicken is completely cooked on the inside, pierce it with a knife to make sure all the juices run clean. If you need to cook it further, then just cover the chicken with foil and bake it till it’s completely cooked. You can even bake chicken wings with this technique and if you do, then just reduce your cooking time. Serve the baked chicken with your favorite salad or corn and your favorite bbq sauce or other dipping sauce.

Originally posted in January 2013, here’s an update with a new video.

A basic oven roast chicken should be in everyone’s repertoire, unless you are a vegetarian and never want to cook chicken of any kind, but that is a completely different discussion.

Roasting or baking  a whole chicken in the oven is a simple as rinse, season, and roast. It’s that easy. If you want to start to get fancy, truss the chicken before roasting to plump up those breasts. It will taste better and look better.

For those who love a nice crispy skin, the key is to dry the skin as much as possible. When we have the forethought, we’ll salt the skin a few hours beforehand and then allow the chicken to air dry in the fridge for a few hours or even up to overnight. First rinse and pat dry the chicken. Next, salt it liberally with kosher salt to help dry out excess water from the skin. As it sits in the fridge, the moisture will come up to the surface allowing it to cook off in the oven.

Smoked Whole Chicken

We are no strangers to the smoker and slow & low BBQ. But for all the hours spent with the mesquite smoldering and cherry branches smoking, all the pounds of brisket and pork butt delightfully slow cooked, until recently we’ve never smoked a whole chicken. Roast chickens make a near weekly appearance for us. As we get older, the lighter meat of chicken feels better to eat, is quite tasty, and sits in the belly much less heavy than pork or beef (although they are still quite delicious). Yet we just didn’t think about smoking a chicken in the smoker. However that thought did creep into our minds recently as we had the BBQ craving kick in, and we are forever changed.

One word, “Aammazzing!” This is something which will now be making a frequent appearance on our summertime tables. Chicken is perfect to pick up a perfect amount of smokiness, the meat stayed moist, and it was simple as can be. You’ll want to keep the smoker temperatures between 250°F-300°F, add in some fruit or nut wood branches or chips (cherry wood, apple, apricot, pecan, almond, etc…)  couple times during the cooking to give a nice smoke flavor, and if you have the foresight, brine the chicken before hand for at least a couple hours, although overnight is usually best.

Oh, and if you want to go over the top, use a good lump charcoal, we usually use a mesquite lump charcoal and have always been happy with the flavors. We smoke in a grill which has a side smoker box. When filling the box with charcoal, we will pile the lit charcoal next to the side vent door (furthest from the grill), then stack the unlit charcoal going towards the grill (not on top of the already lit charcoal). This will allow the charcoal to slowly burn its way towards the grill and not all burn at once.

Time factor for this smoked chicken recipe will vary depending on how big your whole chicken is and the temperatures you keep your smoker at, so it is best to check done-ness by measure the internal temperature of the chicken, at least until you are familiar enough with the process to do it by feel and sight. At the thickest part of the breast is should be around 165-170°F. Usually that will take around 3 1/2 hours for the average chicken.

Baked Chicken Tenders

Yield: Serves 2-4

Total Time: 40 min

Healthier options for these baked chicken tenders would be to try using a little less bread crumbs. For gluten free folks, omit the flour and use rice flour or even corn starch for dredging. The cooking times will vary based on how thin or thick the chicken breast is cut, so take that into consideration when you slice the breasts.

Ingredients:

  • 1 pound (455g) boneless skinless chicken breast
  • 1 cup (240ml) bread crumbs
  • 3/4 cup (180ml or 95g) all-purpose flour
  • 2 eggs
  • kosher salt, to taste
  • fresh cracked black pepper to taste

Directions:

  1. Pre-heat oven to 425°F.
  2. Cut chicken breasts into thin strips. The thinner they are, the quicker they will cook in the oven. Make sure to keep cuts same size and consistent for even cooking. Season both sides of chicken with salt and pepper.
  3. In small bowl, beat 2 eggs. In medium bowl combine flour, salt and black pepper. In another small bowl, add bread crumbs.
  4. Dredge each strip of chicken in flour, then egg, then bread crumbs. Repeat for all chicken strips.
  5. Lay coated chicken strips on sheet pan. Use parchment paper for less sticking.
  6. Bake chicken strips in oven for about 20-25 minutes, or until chicken is completely cooked and crisp. Remember to turn the chicken strips about 1/2 way through cooking.
  7. Serve with your ranch dressing, ketchup, mustard or favorite dip.
